Ingredients
2 eggs
250mL (1 cup) Farmers Dairy eggnog
10 mL (2 tsp.) Rum extract
250mL (1 cup) of white sugar
5mL (1 tsp.) of vanilla extract
250mL (1 cup) of softened butter.
560 mL (2 ¼ cups) All-purpose flour
30 mL (2 tsp.) of baking powder
2.5mL (½ tsp). salt
1.25 mL ¼ tsp. of nutmeg.
Preparation
In a bowl, blend together the eggs, eggnog, rum extract, white sugar, vanilla and softened butter.
In another bowl, sift together all-purpose flour, baking powder, salt and nutmeg.
Add the dry mixture to the eggnog mixture and stir just enough to moisten.
Pour into a greased 9”x5” pan and bake for 40 to 60 minutes at 350ᵒF.
